A quiz can be added to any Canvas course. Different question types are available, and the grade can be published in the Gradebook. The Canvas website has extensive information about the use of quizzes.
Do you want to hide grades for students until you have finished grading all students?
By default, quiz scores will be visible for students as soon as they are entered in the gradebook/Speedgrader. If you want to hide the quiz scores for students, you have to set the grade posting policy to 'Manually', and post the grades yourself at the moment you want the grades to be visible for students.
